Ingredients
Hash
- 400g potatoes, cut into 1.5cm cubes
- 150g bacon strips, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp butter
- Salt and pepper to taste
- 1/2 tsp chili flakes (optional)
Eggs
- 4 eggs
- 1 tbsp butter
Garnish
- Fresh parsley, chopped
- Hot sauce (optional)
Instructions
Parboil potatoes: Add potato cubes to a pot of salted water. Bring to boil and cook 5-6 minutes until just starting to soften. Drain well and let steam dry.
